Homemade Pecan Pie

The pecan pie published by Karo, the corn syrup brand whose advertising from about 1930 made the syrup pecan pie a national standard, according to the 2013 Texas resolution designating it the state pie. This is the company’s current published version.

8 servings · 5 minutes to prepare, 60 to 70 minutes to bake, 2 hours to cool

Method

  1. 1

Heat the oven to 350°F with a rimmed cookie sheet on the center rack.

  2. 2

Stir the corn syrup, eggs, sugar, melted butter and vanilla together with a spoon, then stir in the pecans.

  3. 3

Pour the filling into the unbaked crust.

  4. 4

Set the pie on the hot cookie sheet and bake for 60 to 70 minutes, covering the crust edge with foil if it browns too fast. It is done when the center reaches 200°F and springs back when lightly tapped.

  5. 5

Cool on a wire rack for 2 hours before serving.

  • The source gives no crust recipe; it calls for an unbaked or frozen 9-inch deep-dish pie crust.
  • Karo publishes adjustments for high altitude on the same page; they are not reproduced here.
  • The 1914 “Texas Pecan Pie” quoted in the Texas resolution used a cup of sweet milk, a cup of sugar, three eggs, a tablespoon of flour and half a cup of chopped pecans. The resolution gives no method or crust, so it is noted here and not reconstructed.
